Guacamole is a typical Mexican side dish, which goes well with many foods, but is especially good as a dip with tortilla chips or even French fries. Below you can find an easy recipe to get you started, plus two variations, in case you’re feeling more adventurous.
Basic Guacamole Recipe
Cut a very ripe avocado in half, remove the large pit and scoop out the pulp in a bowl, sprinkle with lime juice and salt. Traditionally, you would now use a pestle and mortar to mash everything together, but a fork will do just fine. Once you’ve achieved a smooth consistency, taste and add more salt or lemon juice as needed. This is the very basic form of Guacamole, where you can expand further.
spicy variation
To make a spicier dip, you can add finely chopped tomatoes, hot peppers such as jalapeno or other chilies, garlic, cayenne pepper, and/or cilantro. Cover the tomatoes briefly with hot water, to make it easier to peel them, and remove the seeds. Cut the tomato pulp into small cubes and reserve. Remove the seeds from the peppers and also chop finely. Mince the garlic, cilantro, and any other herbs you want to add, and mix it all into your basic avocado mix. Add seasonings to taste and mix the tomato cubes carefully, to ensure that the tomato pieces remain as intact as possible.
Toasted Variation
Roasting some of the ingredients, like the onions and garlic, adds a little extra flavor to the mix. Just make sure the ingredients have cooled before mixing them with the avocado. You can even fry some bacon cubes, until crisp, and sprinkle them over the finished guacamole, for extra flavor and crunch.
