Tasty Tropical BBQ Meatballs

What do you need:

  • 1/2 bag frozen meatballs, preferably cooked
  • 2 1/2 cups pineapple chunks (with juice)
  • 2 1/4 cups barbecue sauce
  • 1/2 cup brown sugar

In a large bowl, toss pineapple chunks with juice, barbecue sauce, and brown sugar. Stir until all ingredients are well combined. Place the meatballs in a slow cooker, then pour the pineapple mixture over them. Stir to coat the meatballs with the sauce. Cover and cook for 1 hour on high or 2 to 3 hours on low. Best served hot.

The Best Cheesy Pesto Chicken Pasta

What do you need:

  • 3/4 kilo of chicken breasts
  • 1/2 kilogram rotini pasta, cooked
  • 1/2 lemon
  • 2 cups of grated mozzarella
  • 1 cup of parmesan
  • 1 cup pesto
  • 1/4 cup salted butter, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried basil

Sprinkle the chicken with salt and pepper, then place it in a slow cooker. Spread the pesto over the chicken and squeeze the lemon over it. Spread slices of butter over meat. Cover and cook for 5 to 6 hours over low heat. When ready, shred the chicken then add the pasta and Parmesan cheese. Stir until all ingredients are well mixed. Top everything with mozzarella, then continue cooking until the cheese has melted, about 15 minutes. Garnish with basil before serving.

What do you need:

  • 1/2 kilo of beef or pork sausages, cooked and cut into small pieces
  • 3 potatoes, cubed
  • 2 carrots, cubed
  • 1 onion, sliced
  • 2 cups of beef broth
  • 1 cup frozen green peas
  • 2 tablespoons fruit chutney
  • 1 tablespoon curry powder
  • 1 tablespoon cornstarch
  • 1 tablespoon of water
  • 2 teaspoons garlic, crushed

Combine cooked sausages, potatoes, carrots, onion, beef broth, fruit chutney, curry powder, and garlic in a slow cooker. Stir lightly. Cover and cook for 6 to 8 hours on low heat. When ready, combine the cornstarch and water in a small bowl then add the mixture to the crock pot. Add the green peas. Continue cooking until the sauce has thickened, about 15 minutes. Serve warm.
